These Greek Yogurt Breakfast Muffin recipes came about when I had a container of Greek yogurt in the refrigerator that I needed to utilize. I had originally purchased it to eat as a dessert with frozen blueberries, but ended up eating other desserts instead. So, I decided to make breakfast muffins with Greek yogurt as an ingredient. I made Blueberry Muffins, Chocolate Chunk Muffins, Banana Nut Muffins, and Apple Cinnamon Muffins.
Blueberry muffins are what I usually reach for, but I also wanted to try the same master recipe that I use for blueberry muffins and swap out other ingredients for the blueberries. I tried chocolate chunks and white baking chips, bananas and nuts, and apples and cinnamon. The results were so delicious that I wanted to share the recipes with you!
Below, I first provide the master recipe. Then I provide the alternate ingredients and instructions for each version. The different variations are super easy and provide a variety!
Sometimes, the ingredients we have around the house end up making the best treats!

GREEK YOGURT BREAKFAST MUFFINS (4 WAYS!!)
Ingredients
Master Recipe:
- 1 egg , beaten
- 1/3 cup milk
- 1/4 cup oil
- 1 cup plain Greek yogurt
- 1 tsp vanilla extract
- 2 cups flour
- 1/2 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions

Preheat oven to 400°F.

Line standard sized muffin tin with paper baking cups.

In a large bowl, mix egg, milk, vanilla extract, oil and yogurt.

Add remaining dry ingredients. Mix only until moistened. (It’s ok if the batter is a bit lumpy.)

Fill muffin cups with an equal amount of batter in each cup.

Bake at 400°F for 20-25 minutes.

Cool 10 minutes. Remove muffins from pan and cool completely.
For BLUEBERRY MUFFINS:

Fold 1 cup thawed frozen blueberries into the batter.
For CHOCOLATE CHUNK MUFFINS:

Fold 1 cup chocolate chunks (or chocolate chips) and 1/2 cup white baking chips into the batter.
For BANANA NUT MUFFINS:

Add 3 mashed bananas to the wet ingredients.

After all ingredients are mixed together, fold 1/2 cup nuts into the batter.
For APPLE CINNAMON MUFFINS:

Add 1/2 tsp cinnamon to dry ingredients.

After all ingredients are mixed together, fold 2 grated apples into the batter.

Mix together 3 tsp sugar, 1/2 cup chopped nuts and 1 tsp vanilla extract.

After filling muffin cups with batter (before baking), top each muffin cup with nut mixture.
