Bacon and eggs are a breakfast favorite in my family (as is the case with many families)! My uncle was a lot older than my mom. So, when my mom was little, he sometimes made breakfast for her, which she said was a real treat! This is the way my uncle made this breakfast staple. My mom has treasured the recipe ever since!

BACON & EGGS
- 2 eggs
- 1 tbsp milk
- 1 pinch Kosher salt
- 1 pinch black pepper
- 2 slices bacon
Whisk eggs, milk, salt & pepper just until blended. Set aside.
Using kitchen scissiors, cut two bacon strips in half. Then cut each half into thirds.
In a large pan, lay bacon pieces in one layer. Cook over medium heat until crisp.
Add egg mixture.
Avoid constant scrambling.
As the eggs are setting, using a spatula, push eggs to the side and fold over until just set.
Remove from heat.
Serve with your favorite breakfast potatoes and toast with jam.
